It's about to smell amazing in your kitchen! 

Subji Wubji
(mixed veggie curry)

Ingredients

I always pre-mix my spices in a little bowl 

1 ½ tsp Salt (to taste)

½tsp turmeric

¾ tsp chili (to taste)

½ tsp cumin powder

1 ½ tsp garam masala

1 tsp coriander powder

 

2 tbs oil

1 clove garlic minced

½ inch ginger minced

1 medium onion chopped small

1 medium tomato chopped small

 

1 cup water

3 ½ cups mixed vegetables cut into 1 inch pieces *I suggest using at least ½ a medium potato (to help thicken the sauce), any other vegetables you have in the house, garden or freezer can make up the remainder of the mix.

Directions

1) Heat oil on medium heat in a large non stick frying pan.  Add onion and sauté for 1-2 min.  Add ginger and garlic continue cooking 2-3 min.  Add tomato and cook until soft. 

 

2) Add spices and continue cooking, stirring often until tomatoes break down and the mixture becomes mushy (about 6-10min).

 

3) Now add your vegetables to the pan along with one cup of water.  Stir to combine everything well and bring the dish to a boil.  Reduce heat, cover and simmer for 20min until potatoes are just tender.

 

4) Remove lid and continue cooking to reduce the sauce a bit. 

Serve piping hot with naan or rice and Enjoy!
